As we all know the traditional diets of many parts of the nations in the Med are some of the healthiest in the world. Often their climates and soils allow an amazing array of vegetables and fruits – these form the cornerstones of their cookery.

With this in mind we’ll be drawing on these fantastic recipes to extend your vegetarian repertoire. This course will particularly appeal to all those who may not label themselves as vegetarian but regularly eat meals that are based on vegetables, pulses, dairy or grains. Perhaps it’s now time to experiment with some of the fabulous produce that is now available all the year round – what about concocting aubergine cannelloni – or perhaps a tasty Tuscan bean and tomatoe pie … you will discover a whole range of dishes that will satisfy many varied palates – so, whether you are a true vegetarian or someone who enjoys Mediterranean flavours - why not join us? Our mediterranean medley recipes could contain Goat's cheese, leek, pinenut and fennel tartlets, chestnut and tuscan bean pie, root vegetable dauphinois and finishing with a spanish tortilla.
