Since its introduction this course has proved extremely popular for those who are confident cooks with a passion for food … it’s an intense two day back to back course, which covers a broad range of culinary skills. This course is aimed at those who have knowledge of basic kitchen skills, but are keen to expand their repertoire and learn more about things such as:
Filleting
Boning
Knife skills
Preparation
Meat
Fish
Vegetables
Desserts
This is a fairly fast paced couple of days, that will stretch your abilities as well as ensuring that you tackle some dishes that perhaps you have avoided in the past for fear of failure.
The principles of kitchen management to include:
Sauces
Braising
Roasting
Timing
Poaching
Stocks
This is a fully practical course from which you will not only take home a range of delicious food, you will also glean a great deal of information from a variety of experts in their field, who will demonstrate that being in the kitchen can be a great deal of fun. For example how do you use a chicken to its full potential? You’ll make four different styled dishes from one chicken, as well as learning about the art of hot watercrust pastry, mousselines, terrines and quick breads.
